With the weather heating up food should play its role in creating balance for your wellness. We naturally reach for cooling foods, which is our body’s way of helping to regulate the external factors of the weather. Foods like mint, lemon, watermelon, lime, greens, seafood, seaweed, green apples and cucumber are great ways to keep the body in balance. Some of my family’s favorite summer recipes to cool the body and boost energy throughout the day are Summer Smoothies, Sassy Scallops, and Blueberry Mint Gummy Treats.

Summer Smoothie

A nutrient dense, and energizing way to get your cooling greens into your day. Great for lunch on super busy days when you’re on-the-go!
Ingredients:
2-4 good fresh sprigs of mint
1/2 cup spinach
4 ounces coconut water
1/2 cup kale
6 slices of cucumber
1/2 cup parsley
1/2 a banana or frozen mango
1 lemon for juice
Directions:
Combine all ingredients in a blender and enjoy!
